The vegan recipe for Tomato Sauce Fried Rice:

Ingredients

  • 2 cups cooked rice
  • 3 tbsp tomato sauce
  • 1/2 cucumber (cut into strips)
  • 1/2 cup cashew nuts
  • 2 tbsp vegetable oil

Seasonings

  • 1 tsp salt

Method

  1. Heat vegetable oil, saute cashew nuts and salt until fragrant.
  2. Add cooked rice and tomato sauce; stir until well combined plus fragrant.
  3. Add cucumber and stir evenly.
  4. Remove and serve.
