The vegan recipe for Lotus Root Vinegar Soup:

Ingredients

  • 200 g lotus root (slice)
  • 4 slices ginger (crush)
  • 1/2 cup black vinegar or balsamic vinegar
  • 2 cups water

Seasonings

  • 2 tbsp brown sugar
  • 1 tbsp soy sauce

Method

  1. Place lotus root, ginger, water and black vinegar in a pot.
  2. Cook over low heat for 20 minutes.
  3. Add brown sugar and soy sauce; stir well.
  4. Serve.
