The vegan recipe for Lemongrass and Tofu Soup:

Ingredients

  • 1 stalk lemongrass (cut into 2 inch lengths and lightly pound)
  • 1 tomato (cut into chunks)
  • 1/2 packet tofu (cut into chunks)
  • 1 tsp vegetable oil
  • 3 cups water

Seasonings

  • 1 tsp salt

Method

  1. Place vegetable oil and lemongrass in a pot; fry the lemongrass until fragrant.
  2. Add tomato, tofu and water; bring to a boil and simmer for 5 minutes.
  3. Add salt and stir well.
  4. Serve.
