The vegetarian recipe for Gingerbread Men (eggless):

Ingredients

  • 4 cups wheat flour
  • 1 cup butter
  • 1/4 cup fresh milk
  • 1 tsp baking soda
  • 4 portions or 64 g soft cheese – suitable for vegetarian
  • 1 tbsp water

Seasonings

  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp salt
  • 2 cups brown sugar
  • 2 tsp icing sugar

Method

  • Place brown sugar and water in a pot, stir evenly and dissolve over low heat.
  • Turn off the heat, put in a bowl, add baking soda, mix evenly and let it cool.
  • Add butter, wheat flour, ground ginger, ground cinnamon, ground nutmeg, milk and salt; combine.
  • Knead the dough until smooth and fine.
  • Use a roller to flatten the dough to half inch thickness.
  • Cut gingerbread men out with gingerbread men cookie cutter (small cutter = 50 gingerbread men).
  • Lay them on a greased baking tray.
  • Bake at 160°c for about 20 minutes.
  • Cool and decorate with eggless icing (combine soft cheese and icing sugar; whisk until fluffy).
  • Serve.
