Vegetarian Recipe: Bell Pepper Rice Posted by Susan Siow | Jul 17, 2011 | Rice, Updates, Vegetarian Recipes Ingredients 1 green bell pepper (cut into small cubes) 1 red bell pepper (cut into small cubes) 10 soya nuggets/vegetarian roasted chicken 素食香酥鸡 su shu xiang su ji (defrost and dice) 4 shiitakes (soaked in the water until soft and dice) 3 cups of rice (rinse) Seasonings 1 teaspoon of salt 1/8 teaspoon of vegetarian seasoning 1 teaspoon of soy sauce Method Heat up 1 cup of oil, stir-fry diced shiitakes + soya nuggets. Add rice + salt + vegetarian seasoning + soy sauce + 6 cups of water and briefly stir-fry. Cover the pan and simmer over high heat until half absorbed. Change to low heat and simmer until fully cooked.
