The vegetarian recipe for Sweet Potato Leaf Curry:

Ingredients

  • 500 g sweet potato leaves (wash and drain)
  • 1 cup coconut milk
  • 3 tbsp vegetable oil
  • 1 cup water

Seasonings

  • 2 tbsp curry powder
  • 1/2 tsp salt
  • 1 tbsp soy sauce

Method

  • Heat oil and saute curry powder over low heat until fragrant.
  • Add sweet potato leaves and briefly saute over high heat.
  • Cover the pan and simmer for 15 seconds.
  • Add coconut milk, soy sauce, salt and water.
  • Stir evenly and cook over medium heat for another 1 minute.
  • Serve.
