The vegetarian recipe for Tomato Sushi:

Ingredients

  • 1 cup calrose rice/sushi rice
  • 2 cups water
  • 3 tomatoes (slice into rounds)

Seasonings

  • 2 tbsp vinegar
  • 1 tbsp sugar

Method

  • Place calrose rice and water in the rice cooker and cook.
  • When the rice is ready, dish out and cool.
  • Add vinegar and sugar; mix evenly.
  • Roll into thick rounds and lay tomato slices on top.
  • Serve with soy sauce and wasabi.
