The vegetarian recipe for Tomatoes in Spicy Tamarind Gravy:

Ingredients

  • 3 tomatoes (one: to be blended; the other two: cut each into 6 wedges)
  • 1 piece of ‘wheat cod fish’ 素麦鳕鱼 su mai xue yu/vegetarian fish
  • 2 stalks lemongrass
  • 3 cm length turmeric
  • 3 fresh chilies

Seasonings

  • 2 tbsp tamarind paste (dissolve in 1 cup of water and take the liquid)
  • 1 tbsp vegetarian belacan powder
  • 1 tbsp sugar
  • 1 tbsp soy sauce

Method

  • Place tomato (one) + lemongrass + fresh chilies + turmeric in a blender, puree and set aside.
  • Heat oil, fry vegetarian fish until golden brown, dish out, drain and make eight cuts (but do not split).
  • In the remaining oil (2 tbsp), saute vegetarian belacan powder + pureed tomato mixture until fragrant.
  • Add tamarind liquid + sugar + soy sauce and cook for about 2 minutes.
  • Add vegetarian fish + tomato wedges and cook for about 1 minute.
  • Serve.
