Ingredients
10 sheets of roasted seaweed
1/2 piece of kelp (soak in water till tender, cut into long strips, add some water, simmer till cooked, dish out and set aside)
1/2 loaf of vegetarian roasted duck/素黄金鸭 su huang jin ya (pan-fry, cool, cut into long strips and set aside)
2 cucumbers (peel, remove the core, cut into long strips and set aside)
1 carrot (peel, cut into long strips and set aside)
2 cups of sushi rice (wash)
Seasonings
1/2 cup of vegetarian oyster sauce (add 1 tablespoon of water, simmer till cooked, and set aside)
1/4 teaspoon of sugar
1/4 teaspoon of salt
1/2 cup of vinegar
Method
Sushi Rice = Combine with 2 cups of water in a rice cooker and cook; add sugar + salt + vinegar and mix well; put the rice in a large bowl.
Lay 1 sheet of roasted seaweed on a Sushi rolling mat and spread 1/2 cup of Sushi rice onto it.
Add 1 vegetarian roasted duck strip + 1 cucumber strip + 1 kelp strip + 1 carrot strip.
Sprinkle over 1/2 teaspoon of vegetarian oyster sauce.
Firmly roll the Sushi with the mat.
Slice into 1 1/2-inch thick rounds and serve.
