Vegetarian Recipe: Seaweed with Tomato Soup Posted by Susan Siow | Jul 18, 2011 | Soup, Updates, Vegetarian Recipes Ingredients 4 stalks of celery (dice) 1/2 yam bean (dice) 1 carrot (dice) 2 tomatoes (dice) 1 piece of dried seaweed (tear into small pieces) 1/2 cup of ready-made fried shiitake slices/香脆丝 xiang cui si (heat up 1/2 cup of oil, stir-fry and set aside) Seasonings 1/4 teaspoon of salt 1/8 teaspoon of vegetarian seasoning Method Bring 1/2 pot of water to a boil. Add diced celery + diced yam bean + diced carrot + diced tomato + seaweed pieces + stir-fried shiitake slices into the pot and simmer for 15 minutes. Lastly, add salt + vegetarian seasoning, briefly cook and serve.
