Ingredients

  • 1/2 or 600g of lotus root (wash, slice and set aside)
  • 1/2 cup of groundnut kernels
  • 10 red dates (remove the pits and set aside)

Seasonings

  • 1/2 teaspoon of salt
  • 1 teaspoon of brown sugar

Method

  • Bring water (9 cups) to a boil.
  • Add lotus root slices + groundnut kernels + red dates and simmer over low heat for 1 hour.
  • Dish out and serve.
